Interview with Paul Lo, Robuchon au Dome

Robuchon au Dome is located within the Grand Lisboa Hotel and boasts all encompassing views of Macau. The lavish dining room is adorned with Swarovski crystal chandeliers. Equally as impressive is the wine list, boasting over 14,500 labels. Food and Beverage Director Paul Lo tells us more.

Congratulations on being featured in the World of Fine Wine Awards 2015. The awards, chaired by WOFW editor Neil Beckett, celebrate the importance of a good wine selection and are evaluated by a panel of senior judges. How does it feel to be recognized by industry insiders in this way?

It is always a pleasure of being recognized, especially with this award.

Where did your love of fine wine originate from?

It started at an early stage while I was training around 30 years ago.

What is the secret to your success?

There is no such secret, it’s all about passion and a “wanting to know more” attitude.

What trends are you seeing in Macau at the moment?

There is a second phase of booming, partly due to all the new casino developments that are on-going and everyone seems so eager to have more market shares.

What makes your wine list special?

It is big and comprehensive, boasting a large selection of fine wine. We have reasonable mark-ups in price and ideal storage conditions.

What do you think is the most important element of a good wine list?

I think it should compile all levels of pricing and cover most wine regions. It should also boast good bottles and good service.

Are there any particular wines that you love, or remind you of a certain place or memory?

The Screaming Eagle 1992 and 1994, I tasted them together during a dinner at Robuchon a Galera many years ago located in Hotel Lisboa (previous venue of Robuchon Macau). The wines were released not long ago from a winery and at the time, nobody seemed to know about this cult-wine. The tastes as well as the prices were unforgettable.

What is your fundamental philosophy on fine wine?

A fine wine should be able to tell her story from the glass, deliver finesse and tracks of evolution. It should place a memory for each and every one.

What is next for you?

To continue working on this wine list and keep it up.
