One Dish, One Wine

By Thierry Dessauve

This month, Morrell Wine Bar & Café , three star winner and recipient of the Best By-the-Glass Wine List in North America and in the World, shares their current favorite pairing.

Anna-Christina Cabrales, Head Sommelier at Morrell Wine Bar & Café chose Léoville-Barton 1998 to pair with Wine Bar chef Juan-Carlo Mendoza’s Rack of Lamb, served with chick pea purée, mint essence, baby zucchini and couscous.

“A once powerful, almost angular wine, the Léoville-Barton 1998 has matured and softened beautifully – with concentrated, tart, dark red fruit on the palate, which beautifully complements the earthy, gamey notes of the lamb. What I also love is the way the texture of the couscous and the cauliflower purée polish the wine’s still lively tannins, enhancing the velvetiness of this great St. Julien.”
