Featuring Dutch chef Richard Ekkebus’ stylish take on classic French cuisine, Amber is in the very top drawer when it comes to international fine-dining.
The menu, which has earned Ekkebus two Michelin stars, features elaborate and imaginative dishes such as hakoo farm miyazaki Wagyu beef with red onion skin, dulse seaweed powder, red pearl onions in a shiraz reduction; and crispy roasted red amadai with pointed cabbage, seaweed puree in hairy crab and ginger broth.
The wine list is equally sophisticated, a solidly highbrow collection of great producers from classic France, Italy, Spain, California, and Australia. Its diverse choices and extensive detail impressed the 2018 judges, in particular the detailed sommelier’s notes. It is, as judges have put it, “a very impressive list. All of the key regions plus the smaller lesser-known ones are very well represented by big and small high quality producers. There are many back vintages available. In a word: Brilliant!”
