Fish and seafood, given a decidedly modern, minimalist spin, is at the heart of the menu at the stylish L20 in the Belden-Stratford building beside Chicago’s Lincoln Park. Michelin-starred head chef Matthew Kirkley has followed founding chef Laurent Gras to create elegant dishes that match the pristine surroundings.
To accompany Kirkley’s filigree creations, sommeliers Allison Frey and Aaron McManus have chosen an equally considered list that places a dash of eclectic flair from Greece, Slovenia, Lebanon, and Portugal alongside a deep and long selection of classic producers from classic regions that is particularly strong in Burgundy, Germany, California, Alsace, and Austria. Champagne is also a highlight, with a mix of grower and Grandes Marques, including some fine old Vintage Champagnes such as Salon 1988 and several vintages of Dom Pérignon Oenothèque dating back to 1969.
