And from the very first page of Bouley’s wine list you get the feeling wine director head sommelier Adrien Falcon and his team has been listening only to his own ideas. By-the-glass options include grower Champagne from Laherte and Diebolt-Vallois, and wines from Denis and Didier Berthollier in Savoie and Moric in Austria’s Burgenland. And that’s just the beginning of a creative selection where Germany and Austria, regional France, and the best of Italy are given equal billing to a stellar collection of Burgundy’s brightest names.

As the judges at the World’s Best Wine Lists said, it’s an “eclectic, wide-ranging list that is totally for adults(!)” and perfectly suited to the sensitive, evanescent style of Bouley’s cooking, which is based on seasonally changing, hard-to-find ingredients.
