“European fusion food with a twist” is the promise from the kitchan at Jade on 36 at the Shangri-La Hotel in Shanghai.
It’s a description that fits dishes that mix Asian and Mediterranean influences and ingredients such as salmon fillet cooked in lemongrass and coconut sauce with clams, or pan-seared foie gras “on the rocks” with vodka orange lollipop, served with grilled pineapple and rock candy.
The extensive wine list also has a globetrotting feel, mixing the best of classic European wine with numerous choices from the New World.
Arranged by grape variety, it’s a list where you can find the bechmark New Zealand Sauvignon Blanc of Dog Point alongside Didier Dageneau Silex Pouilly-Fumé; where numerous vintages of Domaine de la Romanée-Conti are accompanied with top Pinots from Coldstream Hills, Bouchard Finlayson, and Sandhi; and where the Bordeaux first growths rub shoulders with Chinese producers such as Grace Vineyards and Silver Heights. Like the food, it’s cosmopolitan in the best sense.
