Proof

“Wine-centric” is the word Washington DC’s Proof uses to sum up its approach, and the description is not misplaced. Alongside chef Haidar Karoum’s creative menu based on seasonal ingredients prepared with eclectic international influences, comes a similarly all-embracing wine list, one that our judges noted for its “broad appeal.”

The “wine-centrism” is immediately apparent in the reasonably priced, Enomatic-maintained by-the-glass list, featuring 32 selections. And it continues through a bottle selection put together by a team headed by wine director Joe Quinn that is a joy throughout, with a formidable collection of big-name classics from both the Old World (multiple vintages of first-growth Bordeaux; a fine selection of Châteauneuf-du-Pape and other Rhône) and New (a roll-call of top California; a well-chosen pick of Oregon). Genuinely international, it also finds space for gems such as Movia Ribolla 2010 from Slovenia and Ken Forrester FMC Chenin Blanc from Stellenbosch, South Africa; this is, as the restaurant’s publicity rightly says, a wine destination for novice and expert alike.
