Bar Brose is a blend of many things – a portmanteau of bros and rosé, while also being called a bar with a serious kitchen, it’s clear that this dining destination is unique. The loud music, beer in cans and natural wines all lean towards a breezy and informal ambiance, yet the menu lists sophisticated dishes including poulet au vin jaune from the French Alps and spaghetti carbonara from Rome.
The restaurant is led by chef Analiese Gregory, who has previously done time at The Ledbury in London, Spain’s Mugaritz and Quay in Sydney. Her globetrotting past is evident with an eclectic wine list that spans the globe, featuring selections from local producers in Australia, to France and Italy in Europe.
