Executive chef Manish Mehrotra is looking to create “Indian food for the 21st century” at his Indian Accent restaurant in New Delhi’s luxury The Manor Hotel.
And his “marriage of global ingredients and techniques with the flavors and traditions of India,” makes full use of a wide-ranging cellar on his Chef Tasting Menu, where baingan bharta cornetto, goat’s cheese butter is paired with Villa Maria Private Bin Sauvignon Blanc, and potato sphere chaat, white pea ragda churan ka karela, quinoa puffs, and bitter melon crisp, is served with Moët & Chandon Brut Impérial.
The main list covers a good spread of styles and producers, with top domestic producer Sula featuring alongside global names such as Gaja, Guigal, Château Margaux, Stag’s Leap, Schlumberger, and Yalumba, making this one of the best wine lists in India.
