Widely regarded as one of Asia’s best restaurants, Jaan has a delightful setting: a Murano crystal and silver chandelier is the centerpiece of a 40-seat dining room with extensive views over Singapore.
The food, from a kitchen overseen by chef de cuisine Julien Royer, is the perfect fit for the elegant surroundings: deceptively simple dishes designed to show off the high quality seasonal ingredients such as romanesco and miso “composition” with macadamia and pickled cauliflower or milk-poached white asparagus with organic egg yolk raviolo, burnt bread Grenobloise.

Among the many highlights are a collaboration with Krug, which includes a specially designed tasting menu featuring dishes by Julien Royer matched with seven Krug cuvees, including top single-vineyard wines Clos de Mesnil 2000 and Clos d’Ambonnay 1998; a strong by-the-glass program that runs from Hugel Riesling to Vieux Télégraphe Châteauneuf-du-Pape; and several flights of mature first-growth claret.
