Marchal Restaurant at Hotel d’Angleterre

By Thierry Dessauve

In the magnificent classical setting of Copenhagen’s Hotel d’Angleterre, the Michelin-starred Marchal restaurant offers a modern take on French and Danish classical cuisine.

That leads to menu that includes an array of superb Scandinavian fish dishes, such as salted mackerel and pickled asparagus, bouillon on mackerel with dil oil, offered alongside a French classic such as chateaubriand, served with marrow, parsley, potato puree, lightly dried cheeses, and truffle gravy.

And the classicism continues on the fine, extensive wine list, which features a magnificent array of top Bordeaux and Burgundy topped up with excellent choices from around Europe and the New World.

Highlights include the several vintages and wines from Domaine de la Romanée-Conti and Petrus, but there is plenty on offer to those with smaller budgets, including a neat, global by-the-glass program that offers Domaine Weinbach Riesling from Alsace and Cloudy Bay Pinot Noir from New Zealand, among other treats.
