The Best of Australia—including many top choices from the local Victorian winemaking scene—mixes with a stellar collection of Old World classics on the impressive wine list at chef John Lawson’s fine-dining restaurant at the Crown Melbourne.

Kicking off with an extensive by-the-glass program that includes premium selections such as Penfolds Bin 389—and Victorians such as Kooyong Ferrous Pinot Noir, Mornington Peninsula and Farr Shiraz, Geelong—the No. 8 list is full of creative selections, with the Mosel’s JJ Prüm rubbing shoulders with Clare Valley’s Leo Buring, and several vintages of Jasper Hill Emily’s Paddock and Georgia’s Paddock followed by Guigal Côte Rôtie d’Ampuis and Brune et Blonde.

It’s a list where diners are sure to find an interesting match for the dishes on Lawson’s perfectly pitched menu, which includes roasted Milawa chicken breast with potato puree, Thai shallots, and broccolini; and crispy Otway Ranges pork belly with caramelized apple puree, carrot, and cider jus.
