The defining quality in a good wine list is the same as that for a wine: balance. And that’s exactly what the wine team has achieved with its selection at the Pacific’s Edge restaurant at the Hyatt Carmel Highlands hotel. Diners attracted to the restaurant for the combination of stunning ocean views and North California coastal cuisine will find a list that is comprehensive rather than endless: a cherry-picked greatest hits (rather than a complete box-set), by some of the wine world’s top producers.

As might be expected from the restaurant’s location, there is a strong commitment to the local wine scene (Monterey, Sonoma, Napa, Santa Cruz), and to the wines just up the coast in the Pacific Northwest. These are complemented by expansive selections from classic French regions (particularly Burgundy and Bordeaux), as well as thoughtful picks from Austria, Australia, Germany, New Zealand, Portugal, and Spain in an impressively intelligent list.
