The Banffshire Club

The “castle in the Rockies,” as the Fairmont Banff Springs Hotel in Alberta is affectionately known, is home to one of Canada’s foremost restaurants: the Banffshire Club. The kitchen, run by executive chef JW Foster, offers an intriguing, Canadian take on the steakhouse: on the grill you are as likely to encounter local bison, elk, and venison alongside the house speciality, cuts of prime Alberta beef.

There’s a distinctly Canadian influence on the wine list, too. Arranged by variety, the country’s burgeoning wine scene is given equal billing to the best imports from around the world, and with choices ranging from Kettle Valley Reserve Pinot Noir to La Frenz Alexandria Muscat Rattlesnake Vineyard, and many more besides, it’s certainly well-represented. But the whole list betrays a genuine love and knowledge of wine, whether in the outstanding selection of classed growth claret and California reds, or the imaginative selections from South West France (a trio of steak-friendly Madirans) and Chile (Casa Marin’s single-vineyard Pinot Noir from the San Antonio Valley).
