The Carltun On The Park incorporates a special chef and sommelier collection within the first few pages of the wine list, which includes comments on the wine’s taste and some suggested food pairings. Although the remainder of the wine list doesn’t share these descriptions, it has a number of other notes, such as the sommelier’s favorite, and intermittent quotes from prominent figures like Dom Pérignon, Mark Twain and Ernest Hemingway, or other notable writers, and Jack Daniels.
Overseeing the wine program is sommelier Fadi Yako, who has developed the extensive list of over 500 wine references and which judges at the 2017 World’s Best Wine Lists commented was “well prepared” and a “classic choice”.
The selection is all-embracing, where numerous vintages from villages in Bordeaux, for example, are covered with meticulous detail and has many growths available. Labels include Domaine de Chevalie Pessac-Léognan 1983, Château St. Jean de Béard St. Émilion 2009, and Château Pontet-Canet 2000, to name just a few. France and Italy, especially Tuscany, have great depth in the selection; however other parts of the world such as Australia have not been ignored, where a range of Penfolds Grange, for example, is offered with vintages dating back to 1966 up to 1996. Of course, North America and California is showcased well with multiple pages of Californian Cabernet Sauvignon from Clos du Val, Grace Family, Lokoya, Stag’s Leap, and Chardonnay from Peter Michael, Cabaud, Mount Eden Vineyards, for instance.
