The Greenbriar Inn

By Thierry Dessauve

With more than 1,200 labels to choose from, The Greenbriar Inn “in the north Boulder countryside” is a rural restaurant with a cosmopolitan wine list. Featuring one of the best collections of domestic, particularly California, wine in the United States, it is also a magnet for wine enthusiasts out to sample the best of France’s classic regions, with a Bordeaux list that mixes affordable bottles from the best recent vintages with an array of mature vintages from the region’s famed classed growths.

Complemented by selections from around the world (New and Old), including many of Australia’s greatest names (Amon Ra, Penfolds Grange, Henschke Hill of Grace and Mt Edelstone), the wine program is designed to match the “farm-to-table” cooking of which Greenbriar was a pioneer. The restaurant was among the first in the United States to plant its own gardens, from which it continues to harvest many of the ingredients for its menu of “seasonal American classics.”
