Whether it’s sourcing vegetables from the restaurant’s own garden, or meat from local farms, whether baking their own bread or doing their own butchery, the team at Appellation at The Louise hotel in the Barossa Valley is all about keeping those food miles down. Executive chef Ryan Edwards leads a kitchen that makes the most of this local bounty in dishes such as seared loin of kangaroo, butternut squash, sticky Puy lentils, and riberry jus; and Barossa grain-fed chicken, lardons, roasted shallot and Shiraz thyme glaze.
That local mission naturally extends to the wine offer, too—how could it not in one of Australia’s great old winemaking regions? The Appellation list is filled with Barossa bottles, including collections from the region’s greatest producers, multiple vintages of the likes of Henschke Hill of Grace and Mount Edelstone Shiraz; Torbreck Run Rig Shiraz-Viognier; Charles Melton Nine Popes; Greenock Roennfeldt Road Shiraz; and Penfolds RWT Shiraz.
These big names are joined by a run of more affordable Barossa bottles that are always clearly signposted on a list that also features a judicious pick of bottles from other Australian and international regions, but which is at its heart very much a local affair.
