Set in an industrial space in Cape Town’s up-and-coming Woodstock area, The Test Kitchen is the work of innovative South African chef Luke Dale-Roberts.
On a menu full of creative, surprising dishes drawing on a range of influences, choices might include grilled scallop, with fine bean, tofu miso suke, braised scallop dressing, miso on toast, braised shitake, and raw shitake; or pork belly with pressed parsley apples, wild rosemary-infused honey, blue cheese cream, and crackling.
The wine list, meanwhile, is brilliantly concise, or as the judges at the World’s Best Wine Lists 2015 put it, “short, but full of interesting choices.”
It is also, as the judges went on to say, a brilliant introduction to the exciting developments in contemporary South African wine, featuring new-wave stars such as Radford Dale, Mullineux, Crystallum, Lammershoek, AA Badenhorst, and The Foundry, but not ignoring more established names such as Bouchard Finlayson, Vergelegen, Hamilton Russell, and Paul Clüver.
