Also like Arbutus, Wild Honey has a short but superb wine list to accompany smart dishes such as French Limousin veal, Maldon oyster ketchup, Tokyo turnips, and winter leaves, or grilled monkfish, fondant of Jerusalem artichokes, heritage beetroot, and rapeseed oil.
In a modest 100 bins the list manages to cover the vinous world, and it was clear to the WBWL 2015 judges that the Wild Honey team has chosen quality over reputation—this is a list that been assembled by people who love drinking wine rather than label-kissing. From Viña Falernia in Chile’s Elquí Valley, to Peter Dolle in Austria’s Kamptal; and from Domaine Léon Barral in Languedoc’s Faugères to Château Pontet-Canet Les Hauts de Pontet-Canet Pauillac 2005, it’s a list of impeccable, unshowy taste.
