Michael Edwards | This property belongs to Louis Boillot and his wife Ghislaine Barthod of Gevrey and Chambolle. Their son Clément makes the wine. Very much a Burgundian approach, 50-to-60-year-old vines, destemmed grapes, 8 days in tank then élevage in a mix of 500- and 228-litre barrels. Again, the 2016 is a much fresher and more aromatic expression than the voluptuous 2015. Sensitive winemaking results in density without heaviness, greater purity and masterly refinement of the tannic structure—which doesn't mask the red- berry and cerise fruit or the salinity of a great terroir from three sites. | 91
