Andrew Jefford | Pale bright silver-gold. Of all of the Santorini Assyrtikos, this is the one that smells most clearly of tephra and pumice. It takes you aback at first and may seem faintly reductive to the uninitiated, but spend some time with it and you’ll soon find the allure. Piles of tephra in the mouth, too, in this full-bodied, structured, unprimary, mellow yet grippy, salty-stony white. Completely unique. A wine of few compromises but very satisfying once you open your mind and your palate to its possibilities. Ultimate terroir wine. | 94
