One Dish, One Wine

This month, Edinburgh’s 21212, a three star winner in the World’s Best Wine Lists 2015, shares its current favorite pairing. Top Chef Paul Kitching chose Viré-Clessé Domaine Michel, 2012, Burgundy to pair with his current favorite dish: trout with scallop, garden greens, smoked pines and asparagus blanc.

Paul Kitching, 21212 Top Chef:

“For the Trout with scallop the wine match would be Viré-Clessé Domaine Michel, 2012. With peach and lemon and light toasty notes of oak, its beautifully balanced vibrant acidity makes this wine perfect with slightly richer seafood such as trout and the earthy flavour of the cabbage, without over-powering the delicate scallop and pea.”
