Mature, evolved; this is showing golden-oldie notes of ripe apple pie and spice both in its aromatic profile and in its flavors, which, while clearly evolving into a second phase of maturity, are just starting to oxidize into bruised apple. But the textural grip and minerally acidity bring life and energy to a venerable elder statesperson. | 89
