The nose is attractive and compelling: citric fruit, hints of sourdough and mirabelle plum; behind that, hawthorn and acacia. This is rich in aroma, with sweetly fragrant notes of vanilla and almond, a praliney nuttiness from autolysis, and energetic, persistent mousse that’s expansive when it hits the tongue, spreading flavors around the mouth. The creamy textured mousse dissolves in tongue-coating, ripe, peachy ripe fruit flavors, tapering to a winey, savory grip and underpinned by salty acidity on the finish.
