Michael Edwards: Again, this wine contains three successive vintages from Cramant, Avize, and Oger, but there is more structure, core, and finesse, since the grapes come from the higher slopes of Avize. The soils, too, are chalkier. Six or seven years on lees and an infinitessimal dosage of just one gram. True extra-brut, still with terrific vibrancy at seven years old. A perfect match with the flamed mackerel and oyster emulsion.
